Darwin began his career in hospitality as a busser in a San Diego Sicilian restaurant. He had a passion for food and restaurants throughout his life, so this was a natural fit as a first job at 16 years old. He continued to work in the industry throughout high school and college, eventually spending time at the Hotel del Coronado, barleymash, and Bang Bang, among others.
After a one year break from studies, Darwin relocated to Los Angeles in 2014 to pursue a degree in medicine. He started his first job in Los Angeles as a busser at Ricardo Zarate’s Paiché, and stared bartending in a few months time. It was there that he fell in love with cocktails and gave in to his passion. He decided to take his career in hospitality full on. Later in that year he completed Julian Cox and Nick Meyer’s cocktail class, and from there spent time behind the stick at Picca, Drago Centro, and now presides over the cocktail program at Faith & Flower. In 2016, Darwin was selected as one of Zagat’s 30 under 30 in Los Angeles.
